Laziness to suit your fancy, cookies....

...or cupcakes!
Cake mixes have been 10 for $10 around here lately, so I've been experimenting on the cheap. This is a classic Midwest Mom cake mix recipe, but one needs some future tweaking to be a little more sweet or a little less dense. I've left it as is because tweaking it might completely defeat the purpose of this "recipe." Don't blink or you may miss this one.

Amazing that after organic chemistry, analytical chemistry , biochemistry, immunology and pharmacology, I still can't figure out what "Polyglycerol Esters of Fatty Acids" might possibly be. I just look the other way and dump it into a bowl....it "contains 2% or less" of it anyway, right?

Dairy and Egg Free Pumpkin Cupcakes or Cookies with Apple Cider Glaze
Cupcakes:
1 box Duncan Hines Spice Cake Mix (egg and dairy-free around here, but check the ingredients for yourself, you know the drill by now)
1 15 ounce can packed pumpkin
Mix together, it will be thick. Scoop into cupcake tins for cupcakes, or spoon onto a parchment lined baking sheet for cookies Bake at 350 for about 10 minutes for cookies or 15 minutes for muffins, until a toothpick inserted to the middle comes out clean, not glopped with batter. Cool on a rack.
Glaze:
1 cup powdered sugar
2 T. apple cider (or apple juice, or lemon juice or soymilk or water!)
Mix well and drizzle over warm cupcakes or cookies.

If they're good that would also be a low calorie snack! Spice cake happens to be my favorite cake mix by the way.

This is what I'm saying!! Here I am, cruising the vegan blogs and you Midwesterners, displaced in the desert though you may be Camille, hold the keys to my allergic kid's happiness!! I sit humbly at your crockpot, show me your secrets!!
Maybe add a half cup of applesauce too? That would sweeten and moisten it a bit...and it would keep it easy. Just a thought...I'm no Midwestern cooking expert...
I don't know if you do soda (pop), but you can also add 1 12 oz can of whatever you want to a box of cake mix. Bake as directed. I've done white cake/diet Cherry 7 UP and Mt. Dew in Lemon. Just something fun to try (albeit not the healthiest nor most natural of recipes!).
