Oh dear. So....I've been keeping these in the fridge, and I left one out overnight to come to room temp to check stability, and it's definitely solid, so I'm a bit baffled at the trouble. Coconut oil is absolutely necessary in this recipe because it's a thermodynamic wonder. Coconut oil is liquid when slightly warmed, semi-solid at room temp and rock hard when cold....which is why it's the basis for Magic Shell. The "meltaway" quality of these comes because of the different melting points of chocolate and coconut oil. The oil starts melting from solid to liquid at body temperature in the mouth, and then melts the chocolate along with it. But don't distress, I have many many failed experiments and it's impossible to truly fail with chocolate. Flopped chocolate cookies, brownies, candies can always find a good home mixed into ice cream!!

I followed the recipe and directions exactly and the mints softened up too much when it reached room temp. So runny in fact I had to use a spoon to eat it! I want to make these as gifts for Xmas, but I can't seem to make it hold up unless it's cold. I even added almost double the chocolate to help it firm up, but it's still too soft.... This cake simply took my breath away! My kids would go crazy for a cake like this! I have kept away from food colourings due to my eldest son's eczema. I love this cake, too! I've made it for my son's 1st birthday and my mother-in-laws birthday the following month b/c I loved the way it looked;)

I cheated though.... I used milk,peanut & egg-free cake mix and then used a can of Sprite;) Mixed it well with a mixer and then divided the batter three ways!! (I used to boxes of mixes, and 2 cans of soda to get the 6 layers)!

My eldest son has had multiple food allergies since childhood.(dairy,egg,beef,sesame,fish,shellfish,peanut/tree nuts,raspberries and possible mustard) My younges is allergic to peanuts/tree nuts. Experience has taught me to be my own advocate for my children. One cannot trust in doctor's alone. We are on our third allergist and dermatologist. I am pleased to say that we have maintained our pediatrician throughout. Finding a doctor to listen to your individual and unique cas and treat you accordingly is key. Homemade dairy and egg free chocolate chip cookies are a favourite at our house. I use 1/2 tsp of baking soda with 2 tbsp of water for the egg, use Earth Balance and Enjoy chocolate chips with great results. Susan H. @ the food allergy chronicles
